Many foodborne illnesses are a result of raw or insufficiently heated food. The most common foodborne illnesses include salmonella infections, which are transmitted via the consumption of raw or insufficiently heated poultry, beef and pork.
Salmonella can also be found in eggs or egg-containing foods, mayonnaise and milk ice cream. Be sure to store foods that may contain salmonella in the refrigerator and heat them for at least ten minutes before eating them. That kills the bacteria.
Also potatoes, green beans, legumes and cereals are only edible after cooking.
Raw beans contain phasin, a human-toxic glycoprotein that causes nausea and vomiting in low concentrations, and in higher concentrations (seven fruits are enough) it can even lead to death. People with a sensitive stomach already have problems with ‘al dente’ beans.
If potatoes are stored incorrectly, for example when stored too long in the light, the toxin solanine is formed.
This alkaloid causes nausea, sweating, headache and burning in the throat and may even lead to respiratory distress. Store potatoes always in the dark and in a cool place.
Cut out green spots. Green tomatoes also contain solanine , so you should only consume ripe specimens.
Almost all mussel species are at risk of containing neurotoxins. By algae this gets into the shells and cooking can not destroy them. Catching a bad clam can cause nausea, vomiting and abdominal pain.
Make sure you only eat fresh mussels that do not smell unpleasant. When cooking, the “good” mussels open by themselves, do not eat the closed ones.
Used as a spice in small quantities, nutmeg is not a health risk. In larger quantities, however, the essential oil contained in the nutmeg Safrol as an intoxicant.
